Resumo

Approximately seventy cooks comprise the Cozinha das Tradições Collective, part of the Forum of Traditional Communities (FCT), whose central objective has been to strengthen, among quilombola, caiçara, and indigenous women, organizational processes promoting food security and sovereignty, health, agroecology, and the practices and knowledge of traditional and ancestral cuisine. Started in 2023, this collective of women cooks seeks to give centrality to the theme of food and traditional culinary practices that women preserve and revive in their kitchens as instruments of political participation and social transformation. This work was produced from the engagement and direct involvement in the organizational and constitutive processes of the Cozinha das Tradições collective, guided by the principles of popular education and the dialogue of knowledge, which takes Fiocruz and the university as poles of scientific knowledge and places them in a relationship of partnership and support to the Forum of Traditional Communities. In this process, we have observed that the spaces for exchange created through the organization of the Cozinha das Tradições collective have enabled mutual understanding among the women, and between them and their communities, of cooking and food as strategies of resistance and struggle for permanence in their territories. It was through the kitchen that these women have been resisting and driving the movement in recent decades. By reviving and valuing local ingredients, traditional preparation methods, and forms of collective management of food resources, the collective articulates practices of food sovereignty with actions of environmental care and the promotion of social justice. Their work has promoted the strengthening of solidarity networks in the communities, boosting and structuring initiatives of solidarity economy and community-based tourism, and, above all, strengthening traditional populations in the defense of their territories and in the appreciation of their cultures and ancestry.
