Resumen
Introduction: The consumption of yerba mate (Ilex paraguariensis) has increased during the last years due to its biological activities: the mate infusions present several bioactive compounds, such as polyphenols, xanthines and phenolic acids. The processing of yerba mate into powders for the preparation of beverages, however, generates different solid wastes which are not utilized but could be employed in the development of new products, increasing the income for the mate industry and reducing the generation of solid residues. Objective: The present work aimed to characterize two solid wastes obtained from the Brazilian Mate industry – pó de palito (PP) and pó de erva (PE)– on their nutritional composition and evaluate their potential as food ingredients. Methodology: Brazilian Instituto Adolfo Lutz official methodologies were utilized on the determination of levels of moisture and ashes (gravimetric methods), lipids (extraction with diethyl ether on Soxhlet system), dietary fibers (enzymatic-gravimetric method) and proteins (micro-kjeldahl method). Carbohydrate content was calculated from the difference to 100 %. Results and discussion: Both materials present high levels of total dietary fibers (over 60 %), which are complex carbohydrates that are not digested in the human digestive system, but provide benefits to the human metabolism. The biomasses present a considerable content of protein (7.69 % to PP and 12.74 % to PE), which justifies their use in the formulation of food for the vegetarian and vegan diets, in association with other non-meat ingredients rich in proteins, such as beans, lentils, and chickpea. Yet, PP presents low levels of lipids (0.68 %), while PE presents 4.11 %. Such low values of lipids results in a low calorific value, which is an interesting point on the formulation of foods for people living on restricting diets. Conclusions: Considering the chemical characterization observed, both the materials can be considered potential food ingredients, source of dietary fibers and rich in protein. The utilization of these by-products is an efficient alternative to promote the decrease on the local solid waste generation, which is a crescent demand on the global market. Finally, the high amount of antioxidant compounds on the yerba mate leaves suggests the presence of part of these antioxidant components in the other structure of the plant, such as the pó de palito and pó de erva, which is the next research topic for our group.
